Ingredients

1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp allspice (optional)
½ cup unsalted local butter, softened
½ cup brown sugar
¼ cup NY maple syrup
2 large local eggs
1 tsp vanilla extract
½ cup fresh apple cider
1 cup finely diced NY apples (peeled or unpeeled)
8 oz local cream cheese, softened
½ cup unsalted butter, softened
2–3 tbsp NY maple syrup (to taste)
2 cups powdered sugar
Pinch of cinnamon (optional)

Directions

  1. Prepare
    1. Preheat oven to 350°F.
    2. Line a 12-cup muffin tin with cupcake liners.
  2. Combine Dry Ingredients
    1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  3. Cream Butter & Sugar
    1. In a large mixing bowl:
    2. Beat butter and brown sugar until light and fluffy (about 2–3 minutes).
    3. Add maple syrup and mix.
    4. Add eggs one at a time, mixing well between each addition.
    5. Stir in vanilla.
  4. Add Dry Ingredients + Cider
    1. Add half the dry ingredients to the butter mixture and gently mix.
    2. Add the apple cider, mixing until just combined.
    3. Add the remaining dry ingredients and stir gently.
    4. Fold in the diced apples.
  5. Bake
    1. Pour batter into cupcake liners (about ¾ full).
    2. Bake for 18–20 minutes, or until a toothpick comes out clean.
    3. Cool completely before frosting.
